The best Mulled Wine in town!

Here is a heart warming, not too sugary, and really yummy recipe for the Mulled Wine season to come! 100% sure to be a hit :-)

Ingredients:
  • 6 clemetines
  • peel of 3 lemons
  • peel of 3 limes
  • 180-200 gr of sugar
  • 18 cloves
  • 3 cinnamon sticks
  • 9 fresh bay leaves
  • 1 whole nutmeg
  • 3 whole vanilla pod, halved
  • 6 star anise
  • 6 bolltes of Chianti

Reciepe:

1. Peel large sections of peel from your clementines, lemons and lime.
2. Put the sugar in a large saucepan over a medium hear, add the pieces of peel and squeeze in the clementine's juice.
3. Add the cloves, cinnamon sticks, bay leaves, halved vanilla pod and about 30 to 35 gratings of nutmeg.
4. Stir in just enough red wine to cover the sugar and let it simmer until the sugar has completely dissolved into the red wine. Bring it then to the boil.
5. Bring to the boil and keep it on for about 4 to 5 minutes, or until you've got a beautiful thichk syrup.
6. When your syrup is ready turn the heat down to low and add your star anise and the rest of the wine.
7. Gently heat the wine and after around 5 minutes ladle it into glasses and serve. You can leave your mulled wine warming up gently on a really low heat so the flavour have time to mingle with the wine and serve as and when needed.

Tip: A key step is to get the sugar and spices to infuse and blend well with the wine, thus the syrup stage!

We've had a lovely review from Captain Bobcat @captainbobcatblog. Eva is a blog about parenting, eco-friendly and ethical lifestyle etc... Since she works from home and remotely, using her laptop, she was a great contender to give us her review.... and it turned out to be positive!

In praise of… public transport?                            The Who might have been right all along.

If the thought of public transport makes you roll your eyes and reach anxiously for your car keys, read on. A growing body of research shows that swapping the car for the bus or train might be one of the best things you could do for your physical and mental health.

It’s well publicised that travelling by public transport is generally better for the environment than taking the car, but what about the health benefits? Could sitting on a bus actually make you fitter, healthier and happier? It sounds incredible, but it might just be true.

One reason is that people who use public transport have been shown, on average, to do four times as much exercise as motorists – usually through walking or cycling to and from bus stops and train stations. A few ten-minute walks might not seem much, but bear in mind that just 30 minutes exercise a day reduces the risk of obesity, heart disease, type 2 diabetes, Alzheimers and 13 different types of cancer. In fact, getting the bus or train could mean that you meet the NHS recommended exercise requirements without ever setting foot in a gym.
